Hope Estate ‘Wollombi Brook’ Semillon Hunter Valley 2016

Estate: Hope Estate was founded by Michael Hope in 1994, with a goal of being able to focus all his time and passion into winemaking. Beginning with 30 acres of vines in Broke in the Hunter Valley, over the years he has been able to obtain unique vineyards throughout Australia, such as 200 acres of the famed red basalt soil at Fordwich. In 2006, Michael purchased the Rothbury Estate, a 420 acre winery in the heart of Pokolbin. Renamed Hope Estate, it has become an icon, symbolizing the best in Hunter. It is a premier destination with an amphitheater that hosts legendary bands, a brewery and restaurant.

Winemaking: Hunter Valley in renowned for its crisp, citrus driven Semillon, with just a bit more acid then Semillon from Bordeaux. Hand harvested grapes are from the estate’s Wollombi Brook vineyard. Grapes were picked in the cool of night and gently crushed. After cold settling, the juice was cold tank fermented “to maintain crisp, fresh characters”.

Winemaker’s Note: Commonly consumed young, the crisp, classic citrus lime character will develop the renowned nut and toasty notes after about 6 years in the bottle.

Tasting Notes: Gold in colour with inviting aromas of apples, candied ginger, honeysuckle and buttery toast. Lemon, lime and green apple glide over the characteristic waxy texture and fuse with fresh acidity. Citrus zest and minerals linger on the lively, crisp finish. Snappy and clean, lovely on its own or with light dishes. [It was fantastic on a sunny afternoon with fresh homemade buttery popcorn.]

Pairing Suggestion from the Winery: A great match for seafood and light chicken dishes.
