Estate: Domaine Labbé is a small family estate run by Alexandra and Jérôme Labbé. The 8 hectare estate is located in the Savoie region of the French Alps, near Lake Geneva.
Winemaking: The vineyard soil is a mix of clay and limestone with large stones left behind by avalanches. The name ‘Abymes’ is in reference to these large boulders that are present in the vineyard. The vineyards are cultivated using organic and sustainable methods. The “soils are horse -tilled and left grassy between the vines to restrict the use of chemicals”. Fermented and vinified in stainless steel to preserve “both varietal typicity and freshness”. Only indigenous yeasts are used in fermentation.
Tasting Notes: Pale gold in colour with aromas of lemon and green apple. Strikingly refreshing with mouth puckering tart flavours of lemon and green apple. Clean minerals shine thru to the bone-dry finish. Brisk and pure like a mountain stream, a fantastic accompaniment to just about any type of cheese and summer weather.
