Domaine Bourdy Cotes du Jura Savagnin 2017

Estate: Founded in the late 1400’s, Domaine Bourdy is one of the oldest winemaking estates in Jura. Brothers Jean-Phillipe and Jean-François are the 15th generation to head the 10 hectare estate. Famed for crafting wines in the same way they were 150 years ago, the brothers use as little intervention as possible, with organic and biodynamic [certified since 2006] methods.

Winemaking: Vines are 30-40 years old in clay, limestone, blue marl soils. Hand-harvested, direct press, native yeast spontaneous fermentation in stainless steel, aged 36-48 months in old oak, unfined, unfiltered.

Tasting Notes: Lemon, chamomile, green apple, saline minerality framed with bright acidity and light bergamot tea tannins. Pistachio cannoli, dried apricot, fenugreek, cedar wisp linger between each creamy sip. Lush, blissful.
