Philippe Chevarin ‘Le Souffle’ Vin de France 2020

Estate: Following a 2 decade career as a musician/audio engineer, Philippe Chevarin pursued his other passion, winemaking. After studying viticulture, oenology and working 2 years with Jacques and Agnes Carroget at Domaine de la Paonnerie, he began his own production. He currently has about 5 hectares of vineyards in Coteaux d’Ancenis that he has been revitalizing with organic methods.

Unfortunately, the past 5 years have been challenging; 3 out of 5 vintages were damaged “from catastrophic frost/hail/mildew”, while some parcels of land are too damaged from years of chemical production and are unusable. With the 2021 vintage he has had to obtain a négociant license. In spite of all the obstacles, his wines are known for their intensity and purity.

Winemaking: Hand harvested, direct pressed, wild yeast spontaneous fermentation in fiberglass tanks, aged on the fine lees, unfined, unfiltered, no added SO2.

Tasting Notes: An orbiting fusion of lemon, candied rose petal, mango, chamomile, flinty minerality across racy acidity. Almond biscotti, lemon zest, grapefruit, cardamom illuminate chalky minerality on the finish. A wild ride.
