I Custodi ‘Pistus’ Etna Rosso DOC 2017

Winery: I Custodi is the result of the collaboration between founder Mario Paoluzi, “Godfather of Etna” winemaker Salvo Foti and a group of 5 grape growers. The project is dedicated to passing down the wisdom of the older generation to the next generation; at the core is the preservation of native grapes, local traditions and respect for the land.

Winemaking: From contradas Moganazzi Cantina and Castiglione di Sicilia on the north slope, 700 meters in elevation with sandy, volcanic, mineral rich soils. Whole-cluster wild yeast spontaneous fermentation, aged in stainless steel vats. ‘Pistus’ means ‘pressed’ and refers to the “fatigue of the Etnean Man” and is the type of wine farmers made for daily enjoyment.

Tasting Notes: Raspberry, plum, red apple, sour cherry, pomegranate, black pepper, forest floor, smoky earthy minerality flanked by fine grain tannins and fresh acidity. Red fruits linger on the smoky finish.
