Estate: Taking its name from the castle perched above the estate, Haderburg was established in 1977 when Alois Ochsenreiter transformed the family farm to focus on viticulture. Located in the narrow Adige Valley in South Tyrol, the 40 hectare biodiverse estate has 11 hectares of vineyards, the remaining land is woods, fruit trees and agriculture farming.
Winemaking: Biodynamic, organic. Vines face west at 350-550 meters in elevation with calcareous, clay soils. Spontaneous fermentation with native yeasts in stainless steel along with about 30% in used oak barrels. Bottled in the Spring, second fermentation in the bottle with a minimum 36 months of ageing on the lees before disgorgement.
Tasting Notes: Baked apple, buttery toast, sage, trace of nutmeg buoyed by bright acidity and graceful, consistent bubbles. Lemon, drizzle of salty caramel linger on the flinty mineral finish. Refined, genteel, airy.
