Winery: In 2014 Filippo Calabresi discovered an abandoned vineyard of Syrah and Viognier in Cortona, southern Tuscany and began revitalization of the vines. Along with his wife Frances, they now cultivate 4 hectares of vineyards, some owned, some rented. do.t.e. stands for ‘down to earth’, echoing the duo’s commitment to making wine without the use of any chemical substances.
Winemaking: Farming is organic and minimal intervention. Wild yeast spontaneous fermentation in stainless steel with 7 days of skin maceration. Aged 5 months in stainless steel, then frozen Pignoletto must from the Modena hills is added to restart fermentation in the bottle. Unfined, unfiltered, no added SO2.
Tasting Notes: Tangerine, chamomile, salty minerality, citrus acidity, sturdy bergamot tea tannins buoyed by abundant fizz. Eucalyptus, lemon, chestnut honey infuse the fizzy finish. Spunky, adventurous, a fun time.
