Winemaking: Wild yeast spontaneous fermentation with 3 days of skin contact without temperature control, aged 6 months in fiberglass containers, unfined, unfiltered, no added SO2.
Tasting Notes: Tangerine, nectarine, grapefruit, chalky minerality glide across a trifecta of sheer fizz, green tea tannins and tangy acidity. A squeeze of lemon on the nutty finish.
