Estate: In 2016 Nicolas Arnou left behind an aeronautic career to pursue his passion of natural winemaking. He worked alongside Jura winemakers Manu Houillon and Pierre Overnoy, in 2018 he purchased an estate in the Layon valley of Anjou. He revitalized and converted the old vine vineyards [planted between 1950-1990] to organic farming [certified].
Winemaking: All activities follow the lunar cycle. Hand-harvested, whole cluster wild yeast spontaneous fermentation for 2 weeks in stainless steel, unfiltered, no added SO2. [The cellar is one of the very first gravity cellars in the area, built in 1895.]
Tasting Notes: Black cherry, red currant, grape, lavender, bramble, saline minerality, white pepper supported by a trifecta of rolling fizz, tangy acidity and fine grain tannins. Blackberry, olive infuse the salty finish. A fantastic fusion of savoury and fruit.
