Winemaking: Indigenous yeast spontaneous fermentation in steel and fiberglass tanks, soft and slow pressing, refermentation in the bottles started with frozen must of the same vintage. Unfined, unfiltered, no added SO2.
Tasting Notes: Rolling fizz buoys mango, pink grapefruit, candied ginger, jasmin, citrus acidity. Tangy citrus and almond linger between each fizzy sip. A wild ride.
