Estate: Holistic viticulture guru of Sicily, Alessandro Viola has 20 hectares of vineyards on the northwestern coast of Sicily. With an oenology and viticulture degree, he practices minimal intervention and organic methods in both the vineyards and cellar. He strives to maintain the natural balance in nature; “relying on the natural fertility of the soil capable of renewal on the condition that the man does not disturb the balance.”
Philosophy: “In wine there is a perfect chemical balance, only nature can go that far, who are we to do better than nature?”
Winemaking: Vines are 30+ years in age, in clay/limestone soils 500-600 meters in elevation, spontaneous fermentation with wild yeasts, aged 9 months on the lees in chestnut botti.
Tasting Notes: Creamy butterscotch, pear, lemon, bergamot, orange, peaty minerality glazed by citrus acidity and green tea tannins. Honey and lemon infuse the salty finish. Supple, vivid, dynamic.
