Estate: Located in the hills outside of Bologna, Susanna Diamanti focuses on crafting sparkling wines from native grapes. In addition to organic farming [certified], Susanna utilizes minimal intervention in the vineyards and cellar.
Winemaking: Spontaneous fermentation with native yeasts, second fermentation in the bottle, unfined, unfiltered, no added SO2.
Tasting Notes: Black cherry, black grape, fig, chocolate, bright acidity and light fizz buoyed by black tea tannins. Blueberry and black currant saturate the fizzy finish. Agile, lively, plush.
