Estate: Inheriting a few rows of vines from his grandfather, Jerome Francois began making wine in his uncle Charles’ barn. He now farms 5.5 hectares of vineyards using biodynamic, low intervention and ancestral methods. His vineyards stretch across the towns of Ammerschwihr, Zellenberg, Kaysersberg and Ribeauville in Alsace.
Winemaking: Vines are 35 to 55 years old, in granite and clay soils. 10 days skin maceration, aged 1 year in old barrels, unfined, unfiltered, no added S02.
Tasting Notes: Apricot, peach, lemon, elderflower liqueur, clean minerality are flanked by jasmine green tea tannins and citrus acidity. Pink grapefruit, squeeze of orange, drizzle of caramel infuse the saline mineral finish. Well balanced, focused, compelling.
