Estate: Volcanic, independent, organic. The guiding principles behind the viticulture and wines of the Botti Family. Continuing the legacy of preservation of the environment from their grandfather, the 3 Botti siblings founded their winery in Castiglione in Teverina, Tuscia in 2003. Located in a unique area where Lazio and Umbria meet, they are dedicated to the native grapes found there, like Grechetto, Violone, Sangiovese and Aleatico. Fully sustainable, certified organic and carbon neutral, they also belong to FIVI, the Independent Winegrowers Italian Federation.
Philosophy: “We are keepers and promoters of our territory, and we preserve the landscape.”
Winemaking: From a single vineyard, Vigneto Cerquabella, planted in 2010 with volcanic and alluvial soils. Spontaneous fermentation with native yeasts, skin contact, ageing in stainless steel.
Tasting Notes: Lime zest, lemon, basil, pignoli, sea salt, drizzle of wildflower honey flanked by light green tea tannins and citrus acidity. Citrus zest underscores the smoky mineral finish. Thirst quenching, engaging.
Paired with Polpettine di ceci e menta and ricotta di bufala e miele al tartufo [chickpea and mint balls and buffalo ricotta with truffle honey].
