Estate: Passionate about preserving tradition and history, Manuela and Luzius Caviezel set out to revitalize Paolina Fabbri’s historical Chianti Classico estate. Located in Greve, the Tuscan estate was purchased in 1780 by the Fabbri family. During the mid 20th century, Paolina Fabbri became a pioneering force in Chianti Classico; along with bottling her Riserva Chianti Classico in Bordeaux bottles, her estate was the first female led winery to join the Chianti Classico Consorzio.
Winemaking: Manuela and Luzius focus on crafting wines that return to tradition, allowing the grapes and land to express themselves. The 6 hectares of vineyards are farmed organically, with minimal intervention.
For both wines, vines are 15-28 years old, 330-350 meters in elevation with clay and limestone soils. ‘Ora’ is aged for 1 year in French barriques, the Riserva is aged in the same manner as Paolina aged her Riserva; for 14 months in French barrels.
Alice at Savignola Paolina passed along that they are finding 2018 to be a good year, with elegance, structure, balance, along with a fresh finish. Having typical climate with good diurnal temperature swings in 2016 contributed to the high aromatics and excellent concentration of flavours expressed in that vintage.

Juicy red and black cherry, chocolate, candied violet, summer earth and herbs are edged by grippy tannins. Mocha, vanilla and crushed black peppercorn infuse the red fruit finish. Hearty and charismatic.

Velvety tannins encircle rich cherry, blackberry, pomegranate, thyme, licorice, chocolate and a trace of toasted oak. Red apple, peppery spice and a hint of espresso linger on the earthy finish. Voluminous, powerful.
