Estate: Hervé Villemade took over his family estate of 8.5 hectares of vineyards in 1995. Dissatisfied with the wines and conventional farming methods, Hervé began organic, sustainable viticulture conversion in 2000. Now, with 22 hectares of certified organic vineyards stretching across 3 communes in the heart of the Cheverny appellation, Hervé Villemade’s wines are renowned for their purity, along with a revitalization of the traditional wines of the region.
Winemaking: Vines are 40-60 years old in a mix of clay, flint and sandy soils.
Hand-harvested grapes are fermented whole cluster with native yeasts in concrete. Unfined, unfiltered, no SO2. From the importer: “Bottled in old school liter bottles that used to be the norm for local négociants in the 50’s and 60’s. The liter bottles are not produced anymore and Hervé obtains them second hand. This means the bottles don’t match, may be discolored, scratched or all types of banged up.”
Tasting Notes: Red-violet in colour, with aromas of blueberry, raspberry, chocolate, garrique. Silky, light black tea tannins compliment black cherry, blueberry, lavender, thyme and moderate acidity. Black currant and baking chocolate linger between each scrumptious sip.
