Estate: Following winemaking school and time at a conventional winery, Benjamin Taillandier began working with natural winemaker Jean-Baptiste Senat. In 2007 he returned to his family’s hometown of Caunes-Minervois at the foot of Montaigne Noir in southern France, purchasing 5.7 hectares of vineyards and began converting to organic and biodynamic viticulture. Over the years he was able to purchase additional plots, today the 9.5 hectare estate is certified organic and biodynamic and is worked entirely by hand.
Winemaking: From vines in schist, limestone and sandy soils. Wild yeast spontaneous fermentation in open vats, unfined, unfiltered, no added SO2.
Tasting Notes: Transparent red-violet in colour, with aromas of black cherry, strawberry, licorice, roasted poblano, forest floor. Strawberry, cranberry, pomegranate, earthy minerality and fresh acidity glide across Darjeeling tea tannins. Blackberry lingers on the pepper infused finish. Vivid, dashing and sleek.
