Estate: 3rd generation winemakers Fausto and Cinzia Cellario are passionately dedicated to preserving both grapes and winemaking traditions that are indigenous to Piemonte. Their estate is located in in the village of Carru, in the southwestern Langhe region of Piemonte. The 30 hectares of organically farmed vineyards are planted with only native Piemonte grapes and spread across 5 different zones, including Novello, Monforte and Dogliani. They are renowned for their Dolcetto wines.
Philosophy: “Our aim is to make a simple and genuine wine.”
Winemaking: Vines are in marl and tuff soils, 350 meters in elevation. Made “with half-pressed and half-whole grapes, simulating the ancient system of pressing on foot”. Briefly aged in stainless steel, bottled during the waning moon, unfiltered, unfined, no added SO2. ‘Il Giovanotto’ means ‘the young man’.
Tasting Notes: Foggy red-violet in colour, with aromas of blackberry, raspberry, cherry, earth, soft spice. All the cherries [black, red, sour] blackberry, bramble and light, tart acidity are underscored by fine grain tannins. Cherry and plum linger on the spicy finish. Plush, fruity, lithe.
