Estate: Holistic viticulture guru of Sicily, Alessandro Viola has 20 hectares of vineyards on the northwestern coast of Sicily. With an oenology and viticulture degree, he practices minimal intervention and organic methods in both the vineyards and cellar. He strives to maintain the natural balance in nature; “relying on the natural fertility of the soil capable of renewal on the condition that the man does not disturb the balance.”
Philosophy: “In wine there is a perfect chemical balance, only nature can go that far, who are we to do better than nature?”
Winemaking: Grapes are from the Pietra Rinosa contrada [cru] with clay soils at 250 meters in elevation. Spontaneous fermentation with native yeasts in stainless steel, aged in stainless steel, unfined and unfiltered.
Tasting Notes: Gold in colour, with aromas of lemon, yellow apple, butterscotch, sea spray and white flowers. Tangy acidity glosses lemon, grapefruit, apricot, lemongrass, saline minerality and a wisp of smoke. Bright citrus compliments the creamy finish. Sunny, crisp and clean.
