Winemaking: Spontaneous fermentation with wild yeasts, 3 days skin contact, unfined, unfiltered.
Tasting Notes: Deep gold in colour, with aromas of peach, honey, chamomile, eucalyptus and lemon. Mineral and citrus driven, with lemon, grapefruit, lemongrass, fresh ginger, orange zest and chalky minerality flanked by bright acidity and super light green tea tannins. Lemon, citrus zest, herbs, and a trace of butterscotch linger on the clean mineral finish.
