Estate: Holistic viticulture guru of Sicily, Alessandro Viola has 20 hectares of vineyards on the northwestern coast of Sicily. With an oenology and viticulture degree, he practices minimal intervention and organic methods in both the vineyards and cellar. He strives to maintain the natural balance in nature; “relying on the natural fertility of the soil capable of renewal on the condition that the man does not disturb the balance.”
Philosophy: “In wine there is a perfect chemical balance, only nature can go that far, who are we to do better than nature?”
Winemaking: From vines 220 meters in elevation with clay soils. Spontaneous fermentation with native yeasts, aged 6 months in steel tanks, unfined, unfiltered.
Tasting Notes: Transparent red-violet in colour, with aromas of black cherry, black currant, raspberry, rose petal, cinnamon and almond. Black cherry, blackberry, raspberry, white pepper, smokey earth and fresh acidity glide across Darjeeling tea tannins. Black currant rose petal and a trace of almond linger between each silky sip. Well balanced, genteel, engaging.
