Cantina Furlani ‘Rosato Sui Lieviti’ Vino Spumante 2019

Estate: Matteo Furlani is the 4th generation of his family to farm the tiny plots of vines, 700+ meters in altitude, in the Dolomites of Trentino, northeastern Italy. The estate was always farmed organically, without any chemicals. Matteo has taken this natural approach further, adopting biodynamic methods.

Philosophy: “Grapes cultivated and vinified with passion, always respecting nature, environment and animals.”

Winemaking: Made with the Sur Lie Method, from the winery: “Sur Lie is something in between Pet Nats, Ancestral Method, Champagne Method”. Spontaneous fermentation with native yeasts in stainless steel, frozen must added before re-fermentation in the bottle during Spring. No added sugar or sulfur, no disgorgement.

Tasting Notes: Bright ruby in colour, with aromas of wild berries, hay, flinty minerality, trace of petrol and Edwin Starr funk. Delicate strawberry and cherry fuse with white pepper, hibiscus, pink grapefruit, glossed by citrus acidity, atop fine fizz. Berries accent the crisp mineral finish.

[Enjoyed with Arancini with cilantro crema.]
