Estate: Husband and wife team Karina and Guillaume Lefèvre founded Domaine de Sulauze in 2004. The estate is named for the ‘Lauze’, the flaky limestone soil filled with shells of the vineyards. Following the lunar calendar for all activities, the 39 hectare estate is certified organic and biodynamic [30 hectares of vineyards, 2 hectares of barley for their brewery, 2 hectares of wheat for bread and 5 hectares of olive groves].
Winemaking: Vines are 15 years in age, spontaneous fermentation with native yeasts, unfiltered.
Tasting Notes: Light coral in colour, with aromas of nectarine, apricot, grapefruit, chalky minerality and white flowers. Red currant, strawberry, melon, pear and chalky earth are glossed by fresh acidity. Orange zest and a trace of ginger linger on the tangy finish.
