Estate: Natural winemaker extraordinaire and all around rock star of Puglia, Valentina Passalacqua farms her family vines using biodynamic and organic methods. Located inside Gargano National Park in northern Puglia, the 80 hectares of land was once thought to be so poor that only cattle were grazed on it. Winemaking: Grapes are from younger vines in rocky, limestone soils. 4 day maceration on the skins without temperature control, spontaneous fermentation with wild yeasts. Unfined, unfiltered.
Tasting Notes: Red-violet in colour with aromas of black cherry, baked plum, cinnamon, wildflowers, and iron earth minerality. Black cherry, morello cherry, cranberry, earth, and an herbaceous undercurrent are framed by fresh acidity and black tea tannins. Black pepper, black cherry, flinty minerality and just the slightest hint of fizz linger on the tangy finish. Refreshing and gluggable.
