Estate: Natural winemaker extraordinaire and all around rock star of Puglia, Valentina Passalacqua farms her family vines using biodynamic and organic methods. Located inside Gargano National Park in northern Puglia, the 80 hectares of land was once thought to be so poor that only cattle were grazed on it. Winemaking: Spontaneous fermentation in steel tanks with wild yeasts on the skins for 4 days, fermentation finished in the bottle, [metodo ancestrale or pet-nat], unfined, unfiltered.
Tasting Notes: Foggy coral-orange in colour, with aromas of tangerine, citrus blossom, grapefruit, hay and sea spray. Tangerine and kiwi are glossed with saline minerality and fresh acidity. Orange, citrus blossom and dried mango linger between each fizzy sip. A fun play between citrus and salt, zippy and super gluggable.
