Estate: Natural winemaker extraordinaire and all around rock star of Puglia, Valentina Passalacqua farms her family vines using biodynamic and organic methods. Located inside Gargano National Park in northern Puglia, the 80 hectares of land was once thought to be so poor that only cattle were grazed on it. Winemaking: Spontaneously fermented with wild yeasts in stainless steel for 5-6 days, followed by 6 months of ageing in stainless steel tanks, unfined/unfiltered.
Tasting Notes: Gold in colour, with aromas of lemon, pineapple, nuts, saline minerality, crushed rocks and a trace of coconut. Lemon, pineapple, candied ginger and saline minerality are accented by bright acidity; pink grapefruit and orange zest linger on the saline finish. Sunny, fresh and tangy.
