Estate: Located in the picturesque, steep slopes of Valle d’Aosta, in the shadow of imposing Monte Bianco, Ermes Pavese began making wine in his family garage in the 1990’s. The estate is dedicated to Valle d’Aosta’s only native white grape, Prié Blanc. Terraced vineyards of the ungrafted Prié Blanc are located around 1200 meters in elevation, making them some of the highest in all of Europe. The vineyards are spread across the hamlets of La Salle and Morgex and farmed organically. Today Ermes is joined by his son Nathan, their 17 hectares of vineyards make them the largest producer in the area.
Philosophy: “The vine is hard work, passion, dedication, but also satisfying and fun. We try to bring all this into our wines, working at their best, with seriousness without losing a bit of necessary madness.”
Winemaking: Whole bunch pressed, vinified in stainless steel.
Tasting Notes: Pale gold in colour, with aromas of green apple, citrus blossom, lime and delicate herbs. Lemon, lime, green apple, a dash of white pepper and steely minerality and citrus acidity fuse with fresh herbs on the crisp, mineral driven finish. Fresh, agile, silky and pure.
