Estate: Located inside Gargano National Park in northern Puglia, Valentina Passalacqua farms her family vines using biodynamic, organic and low intervention methods. The 80 hectares of land was once thought to be so poor that only cattle were grazed on it. At 200 meters in elevation, the calcareous white rocky soil is complimented by Mediterranean climate. Winemaking: Vines are in clay and limestone soils. From Valentina’s site: spontaneous fermentation with indigenous yeasts in open vats, 4 days skin maceration, aged in stainless steel.
Tasting Notes: Amber coral in colour, with aromas of apricot, sea spray, forest floor and lemon. Apricot, orange zest and clean minerality are framed by zippy acidity and light, green tea tannins. Sea salt, pink grapefruit and mandarin orange linger between each nimble sip.
