Estate: Cyrille Sevin has become renowned for his elegant, zero dosage, traditional method sparkling wines. Located in Cheverny in the Loire Valley, his 11 hectares of vines are certified organic.
Winemaking: Grapes are from vines ranging from 15-80 years old, in clay/limestone, sand/gravel soil. Method Champenoise/Traditionnelle, aged for 24 months on the fine lees before disgorgement. No dosage, no sulphur.
Tasting Notes: Dark garnet with pink froth, with aromas of black cherry, garrigue and cocoa. Lithe black cherry, blueberry, red currant, white pepper, rosemary and olive are supported by light black tea tannins and fresh acidity. Consistent, agile frizz runs thru to black cherry, flinty minerality and a trace of mocha on the effervescent finish. Dynamic and supple.
