Estate: Cantina Marilina is an organic winery located in southeastern Sicily, with vineyards in 2 appellations; Noto DOC and Eloro DOC. Founded in 2001 by Angelo Paternò, today the winery is headed by his daughters, sisters Marilina and Federica Paternò. Surrounded by a UNESCO World Heritage Site and wildlife sanctuaries, the sisters are steadfast in their determination to use low intervention, organic, traditional, environmentally friendly methods to craft natural wines with a “strong territorial identity”. The wine bottles carry “zero environmental impact: light glass, natural cork stopper, recycled natural paper label and no capsule”.
Philosophy: Absolute respect for the earth
Winemaking: All wines are fermented with indigenous yeasts, un-refrigerated and lightly filtered with natural products, suitable for vegans. Hand harvested grapes are from vineyards in the Noto region, in white, calcareous soil. Fermented in cement tanks with native yeasts, aged in in cement for 18 months followed by 3 months in the bottle.
Ruvérsa means “to go backwards” in Italian. The cement tanks it was vinified and aged in, without temperature control reference ancient winemaking traditions. It is a wine made out of “respect for the natural steps in the evolution of wine”.
Tasting Notes: Dark garnet in colour, with aromas of raisin, plum, clove, cinnamon, rose, black pepper, rosemary, smoky earth and a wisp of sandalwood. Intense blackberry, black cherry, plum, raisin, rosemary and eucalyptus are encircled in smoke, complimented by fresh acidity and grippy tannins. Morello cherry and earth elongate the velvety finish. Plush, vibrant, saturated, pure, clean.
