Estate: Husband and wife team Gianmarco Antonuzzi and Clémentine Bouveron revitalised around 14 hectares of abandoned land in Gradoli, Gianmarco’s childhood town. The property faces Lake Bolsena and is on the border between Lazio and Tuscany. Vines are set amongst olive groves, chestnut and oak trees. Farming is low intervention, using biodynamic and organic principles. The volcanic soil is rich in iron and minerals.
Winemaking: From young vines pressed directly, fermented spontaneously with native yeasts, aged in cuvee then bottled the following spring. Unfiltered, unfined, no added sulfur.
Tasting Notes: Cherry red in colour, very aromatic, with strawberry, cherry, raspberry, candied apple, sour cherry, sea spray and thyme. Morello cherry, wild strawberry, green apple, raspberry and white pepper fuse with salty/smoky minerality, framed by delicate fizz and fresh acidity. Tangy fruit compliments the savoury finish. An invigorating, gluggable fusion of salty/sweet/sour flavours.
