Estate: 3rd generation winemakers Fausto and Cinzia Cellario are passionately dedicated to preserving both grapes and winemaking traditions that are indigenous to Piemonte. Their estate is located in in the village of Carru, in the southwestern Langhe region of Piemonte. The 30 hectares of vineyards are planted with only native Piemonte grapes. They are renowned for their Dolcetto wines.

Winemaking: Farming is organic [soon to be certified]. Dolcetto grapes are from the San Luigi vineyard, Nebbiolo is from the Galli vineyard. Hand harvested, spontaneous fermentation with native yeasts, aged in stainless steel for 6 to 8 months until bottling. Bottled with minimal sulphur sulfur, unfined and unfiltered.
Tasting Notes: Ruby-pink in colour with aromas of strawberry, cherry, soft spice and wildflowers. Juicy cherry, watermelon and wild strawberry are accented by clean minerality and fresh acidity. Raspberry, a flash of licorice and a streak of bitterness linger on the lengthy finish. Silky, fresh and super gluggable.
