Estate: Located in the Marche region of eastern Italy, Aurora was founded in the 1970’s, by 4 friends with a goal of living and farming sustainably. Today the next generation is continuing on in their parents footsteps. Aurora has 32 hectares of land; 10 hectares of vineyards, 2 of olives, one of fruit trees (mostly apricots), 5 hectares of rotational crops and the rest is forest. The entire estate is organic and biodynamically farmed, minimal intervention is used in the cellar.
Winemaking: Grapes are from southwest facing vines in clay/calcium rich soil. The clusters were de-stemmed and pressed and the must underwent a spontaneous fermentation without the skins for 20 days at a temperature of 22 C. There were 2 rackings between tanks before bottling on July 14, 2015.
Tasting Notes: Light ruby with orange highlights in colour, with aromas of strawberry, cherry, candied violet and clean minerality. Silky red fruit layers with a hint of mandarin orange, floral and white pepper, complimented by fresh acidity. A streak of minerality runs thru to the clean crisp finish.
