Estate: Located in northern Tenerife, Dolores Cabrera has been farming her ancient vines organically for many years. It was only in 2013 that she began bottling her own wine.
Winemaking: Grapes are from 100 year old vines on the slopes of Mount Teide at 480 meters in elevation and in volcanic soil. The vines are trained in a method known as ‘el cordon trenzado’ [braided cord’], which is a system of horizontal braided grapevines unique to the Canary Islands. Grapes are hand-harvested with primary fermentation in steel tanks followed by malolactic and aging in old Burgundy barrels for 10 months. Bottled without fining or filtration, and very little SO2 added.
Tasting Notes: Transparent red-violet in colour, very aromatic with tarry, smoky earth, cherry, strawberry, black currant, plum, wild flowers, grilled herbs, ancho chili and black pepper. Smoky minerality wraps around pomegranate, blackberry, cherry and roasted herbs, framed by fresh acidity and silky, firm tannins. Flinty, volcanic minerals, red fruits and a delicate floral trace linger between each plush sip.
