Estate: Located inside Gargano National Park in Puglia, Valentina Passalacqua farms her family vines using biodynamic and organic methods. The 80 hectares of land was once thought to be so poor that only cattle were grazed on it. At 200 meters in elevation, the calcareous white rocky soil is complimented by Mediterranean climate.

Winemaking: Spontaneously fermented with wild yeasts, 2 weeks skin contact, unfined/unfiltered, no added sulphur.
Tasting Notes: Foggy, pale gold in colour with aromas of lemon, candied ginger, nuts, pineapple, trace of coconut and Brothers Johnson funk. Super tart lemon and lime with a drizzle of honey, saline minerality glazed by racy acidity and the softest of fizz. Grapefruit and Himalayan pink sea salt on the tangy finish. Clean, pure and engaging, pucker up 😉
