biodynamic budget friendly italy natural organic sustainably farmed

San Salvatore ‘Vetere’ Rosato Paestum IGP 2017

Estate: San Salvatore was founded in 1988 by Giuseppe Pagano. The estate is located in the middle of the Cilento National Park, near Paestum, in the Campania region of southern Italy. The area is known for its ancient Greek ruins, rich biodiversity and over 2000 years of grape cultivation. Of the estate’s 110 hectares, the majority is devoted to vegetable farming and woodlands. Vineyards comprise 22.5 hectares, and there are 10 hectares of olive groves. The estate is certified organic and uses biodynamic methods. The water buffalo that roam the property are the sole source of fertilizer used on the vines, along with milk for mozzarella production. Solar powers the winery.

Winemaking: Grapes are gently pressed, followed by fermentation with indigenous yeasts in stainless steel tanks.

Tasting Notes: Pale coral in colour with aromas of wild strawberry and slate minerality. Strawberry, candied lemon, peach, honeydew melon, minerals and a floral trace are accented by fresh acidity. Pink grapefruit glosses the dry, fruity finish. Lithe and refreshing, like an elegant strawberry lemonade.
