Estate: Costa Graia was founded by 3 friends from Lazio; Daniele Proietti, Gabriele Graia, and Pierluca Proietti. The 7 hectares of vineyards are located in Piglio, in the Lazio region, about 50 kilometers southeast of Rome. They grow grapes indigenous to the area with minimal intervention and zero chemicals or additives. Check out their Manifesto Page, one of my favourites is:

Winemaking: Grapes are hand harvested from vines in clay soil, whole cluster pressed, unfined, unfiltered spontaneous fermentation with indigenous yeasts. Aged on the lees for 5 months, 10% in 54-liter carboy glass and the remaining in stainless steel.
Tasting Notes: Coral pink in colour with aromas of strawberry, marzipan and Brothers Johnson funk. Candied flowers [rose/violet] and airy marzipan are accented by light strawberry, cherry and apricot. Fresh acidity glazes the dry, spicy finish. Engaging, interesting and super refreshing!
