Estate: Savia Viva is a small winery located in a protected nature park in the Penedès, the historical region of Catalonia. In an area known mostly for its Cava wines, the state places an emphasis on local varietals, and with the wide range of soil types found in their vineyards, they are able to craft wines exhibiting the “diversity and complexity” of the region.
Winemaking: The estate is dry-farmed, certified organic, and does not use chemicals in any phase of wine production.
Tasting Notes: Brilliant cherry-red in colour with aromas of black cherry, wet slate and hints of funk. Quite robust for a Rosé, having a disposition more like a light bodied red, with cherry and strawberry flavours running atop a clean mineral undercurrent, crushed pink peppercorn and lightly smoky qualities comprising the dry finish.
