With a global emphasis on sustainable farms and green initiatives, Biodynamic wines are finally moving to the forefront and being happily noticed by everyday wine enthusiasts. As of right now, the largest array are usually found online with wine shops that specialize in not only Biodynamic, but also unique, boutique and hard to find wines.  Stefano Bellotti, the founder and winemaker behind Cascina Degli Ulivi is considered the father of Italian Biodynamic wine. He reclaimed the family farm in the hills of Piedmont in 1977 using only organic methods, by 1984 he had established the farm as Biodynamic. In addition to the vineyards, the estate has a diversified production of fruits, vegetables and cereals, along with many farm animals. It is a “learning farm” complete with B & B that offers wine and farm excursions. He never adds sulphites to his wines, and doesn’t feel as though he makes wines, rather he “accompanies the grapes as they go through nature’s processes.”

Dark cranberry in color with aromas of  strawberry and ever so subtle hints of funk. The medium body had almost a fizzy texture, whilst earthy, warm hay notes emphasized jammy blueberry and cranberry flavors along with a bright acidity . Mildly spicy white pepper happily mingled with fresh anise and woodsy elements in the lengthy finish. A refreshingly dry wine intended for the table, each sip envelops with its velvety softness and ensures a swiftly depleted bottle.
